Strawberry Oat Bars

When life gives you strawberries, make strawberry oat bars!

The sweet strawberry filling layered between a chewy oat crumble will satisfy your sweet tooth. These bars are also perfect for a quick breakfast, or an on-the-go snack.  One bowl, one pan, a simple yet satisfying alternative to cupcakes, donuts, and packaged foods.  

The chia seeds pack a powerful nutritional punch.  Loaded with soluble fiber, probiotics, protein, and much more, these tiny black seeds provide sustainable energy while aiding digestion.  

Freeze them for later, or add a scoop of ice cream to a warm, aromatic bar to make a cobbler a la mode.

Strawberry Oat Bar Ingredients

  • One and half pounds strawberry
  • 2 tbsp strawberry preserves
  • 1 tbsp honey
  • 1 tbsp at Germaine
  • Juice of half a lemon
  • 3 tbsp chia seeds
  • 1 1/2 cups Oats
  • 1 cup whole wheat flour
  • 2/3 cup brown sugar
  • Stick of butter
  • Pinch of salt (1/2 tsp)Substitutions:Substitute for strawberries and preserves: Try a different fruit or berry.**If you are using the filling as an add on to yogurt or oatmeal, leave out the liquor**

Strawberry Oat Bar Instructions

  1. Cut strawberries and mix with all ingredients through chia seeds. Preheat oven to 375F.
  2. Melt the butter. In a large bowl, combine oats-salt and use your hand to mix together until it forms into a crumbly texture.
  3. Line a square baking dish with parchment paper.
  4. Reserve half the crumble mixture and press the rest down into the pan forming a crust.
  5. Top with strawberries, then apply the remaining oat crumble mixture on top.
  6. Bake for about 40 minutes or until crumbles are golden brown and the strawberry mixture is bubbling up on the sides. Let these bars cool completely, otherwise, it will be more of a crisp (still delicious).
  7. When cool, you can cut them into bars for a healthy dessert!
  8. Top with vanilla ice cream for a real decadent experience. Freeze the individual bars for future snacks, or keep in the refrigerator for up to 5 days.
